Preparation time: 40 minutes
Cooking time: 20-30 minutes
1 chicken breast
1 medium chopped capsicum
1 medium tomato chopped
1 small or medium chili chopped
2 large garlic pods grated
Rocket leaves, to taste or optional
1 gondhoraj small or medium, per taste, use half for marination (keep half and sliced for baking)
Salt and pepper as per taste
1 tsp of parsley and thyme each
2 tsp olive oil or white butter
1 tsp each if parsley and thyme
Mix all the above and marinade for 40 mins
Line a baking dish with olive oil and place the sliced lime at the bottom, place the marinaded chicken breast on this and bake for 20 mins. Turn the breast over and bake for another 20 mins.
For the sauce, use the gravy and vegetables from the bottom of the baking dish.
Keep the lime slices from the baking dish aside for dressing or serving in the side.
In a shallow frying pan add:
1 tsp of olive oil fry some chopped garlic till slightly brown, add some more capsicum and tomato, if desired some mushroom and broccoli.
Add all the gravy from the baking pan to this.
Fold in some flour to thicken the gravy. Sprinkle parsley, and thyme.
Pour this gravy over the chicken breast or serve on the side with the lime slices
